Fresh green beans in the Instant Pot.

I am a gardener and I can lots of my vegetables but I also love the taste, like most people, of vegetables cooked right after picked from the garden. Green beans are no exception. I grew up using bacon grease or fatback in them but in later years, while trying to be a little healthier, I found ham seasoning, which my kids love and so do I. (My kids don’t really care for it as much the fattening way. What?? I know….. Crazy, but also good.).

I strung and snapped my greenbeans and washed them (water only) at least twice. If the water is still dirty, wash then again. After that, I put them in my instant pot (it was about 3/4 full) and covered it completely with water. For this first batch, I used bacon grease (use your typical seasoning amount. I used 2 tablespoons.) just because I hadn’t had it in a long time, and I also added 2 tablespoons of salt. That is it. Cook on high pressure for 30 minutes and let it do a natural release. Presto! The beans are completely done. If you like thin a little crisper, you can back down the time.

If you prefer to do the lighter version, use the Goya ham seasoning that is found in the Mexican section. I would use 3 packages for the amount that I had. I would also backdown on the salt to about 1 1/2 tablespoons.
