Instant Pot Chicken with Soy Sauce
Ingredients:
1 1/2 to 2 pounds boneless skinless chicken breast
1/2 cup lite / low sodium soy sauce
2 cups chicken broth
2 Tablespoons brown sugar
1/2 tsp black pepper
Combine chicken broth, soy sauce, brown sugar and pepper in instant pot. Stir to combine. Then add chicken breast to pot.
Put on lid and cook on High for 10 minutes. (If frozen, cook for an extra 5 minutes.). Once done let sit for a couple of minutes and then you can do a fast release. If you want the sauce a little thicker, take the chicken out of the instant pot, add a couple of tablespoons of cornstarch to a couple of tablespoons of cold water and stir it into the sauce. Turn the instant pot onto Sauté and cook the sauce, stiring constantly, to thicken the sauce. Once your desired thickness turn your IP off and you are done.
I served this with green beans and rice. It was good and the chicken had a good flavor. I think it will be even better to cut up or shred the chicken and put it back in the pot to soak up more of the flavor for a few minutes. May try that next time. Happy eating! :0)
