Mommy to Bee Shower Food – Mini Mac & Cheese
For our Mommy to Bee shower we prepared Mini Mac & Cheese bites. My niece, that we were giving the shower for and especially her husband, love Mac and cheese and we tried incorporating foods that they liked that were also finger foods too. These Mac & cheese bites were great and worked out perfectly!
Ingredients:
8 oz elbow macaroni
2 tablespoons butter
2 tablespoons all-purpose flour
1/4 teaspoon paprika
1/2 cup milk
8 oz sharp cheddar cheese
Instructions
- Preheat oven to 400 degrees.
- Grease a nonstick mini muffin pan with nonstick cooking spray.
- Bring a pot of salted water to a boil over high heat, then add elbow Macorni.
- Cook the pasta per package instructions. After cooked drain and rinse the pasta and set aside. Turn the empty pot to medium and add the butter and paprika. Once the butter is melted, add the flour and stir into the mixture , then whisk in the milk. The mixture will be very thick. Make sure to whisk out all the lumps. Remove the pot from the heat and add the cheese and drained pasta, stirring it all together until the cheese and sauce are well combined.
- Put your mac and cheese into the mini muffin cups. Pack the mac and cheese into the muffin cups with a spoon or your fingers. Make sure you pack it really well. If you don’t, the Mac and cheese won’t hold it’s shape.
- Bake for 15 minutes or until bubbling. Remove from oven and place them on a wire rack to cool. Makes 24 mini Mac & cheese bites. Enjoy!!
