Oven Fajitas

This recipe is for Oven Fajitas. Well, Obviously.... it is right there in the name.... :0) I first got this recipe when I started with a weight loss doctor and it is still a regular in our household.

This recipe is easy to do. Of course, cutting up everything takes time, so if you are making this recipe after work, you may want to cut up everything the night before and have it ready to go. Other than that, it is really simple and very good. Happy Eating!
 Ingredients:
Seasonings:
1 Tbsp Chili Powder
½ Tbsp Paprika
½ tsp Onion Powder
¼ tsp Garlic Powder
¼ tsp Cumin (Option)
1/8 tsp Cayanne Pepper
1 tsp Sugar
½ tsp Salt
½ Tbsp Corn Starch
 
Fajitas:
2 Small Onions
2 Medium Green Bell Peppers
1 Medium Red Bell Pepper
1 Lb. Chicken Breast
2 Tbsp Vegetable Oil
1 Medium Lime (Optional)
8 (6-inch) Tortillas
½ Cup Sour cream (Optional)
¼ Bunch Cilantro (Optional)
Preheat the Oven to 400 Degrees. Cut the onions and bell peppers into 1/4 to 1/2 inch wide strips.  Place them in a large 9 x 13 inch casserole dish. and Slice the chicken breast into strips and add it to the casserole dish with the vegetables.
Mix all the ingredients for the fajita Seasoning in a small bowl and sprinkle over vegetables and chicken. (Chili Powder, Paprika, Onion Powder, Garlic Powder, Cumin (Optional), Cayenne Pepper, Sugar, Salt and Corn Starch.)  Drizzle the vegetable oil over everything and then use your hands to toss the ingredients until everything is well coated in oil and seasoning.  Bake in the preheated oven for 35-40 minutes, shirring once halfway through. 
 
Optional: Squeeze the juice from half of the lime over top of the meat and vegetables after it comes out of the oven.

Scoop a small amount of meat and vegetables into the center of each tortilla. Top with a few sprigs of cilantro and a dollop of sour cream,
These fajitas are Really Good. I usually double or triple the recipe most of the time and a lot of the time I also add yellow squash.  The one I prepared, in the picture above, was at least tripled and I more than tripled the seasonings.   (It is really how much you like that determines how much to add.) Really Yummy!
